Crockpot Cinnamon Applesauce

Good Morning and Happy Friday to y'all! Hope you are enjoying this amazing fall weather as much as I am! I am totally in love with this time of year. Windows are open, pumpkin spice latte is in my mug, the leaves outside are just slightly starting to turn their beautiful shades of red orange and yellow, and I have almost every apple smelling thing possible in my house. 

Candles, warmers, plug-ins, automatic sprayers, car air fresheners...all apple! I'm obsessed! I could eat apples every day! Especially in the fall. Having my house smelling like this is pure heaven. Every time I walk in the door I take a huge deep breath and just smile. 

One tradition my sister and I have every year is to go apple picking together. I graduated from college in 2008 and was lucky enough to have her open up her doors to me so I had a place to live while trying to find a job. At the time my nephew was two and he was totally obsessed with us! All he wanted to do was be with his Momma and Aunt. My name is Elizabeth, but that's a lot for a little one to say, so he just called me Aunt. To this day that's really all he calls me. Come to think of it, I don't think he's ever called me anything but Aunt! I love that. 

That year we took him to a nearby apple orchard and picked apples with him. It was the cutest thing watching his chubby little cheeks bounce as he waddled up and down the rows. From then on, we promised to make it a tradition.

Fast forward six years and we are still doing it. *Sniff* This year though my little bubba didn't want to go (wipes tear away). It's ok though. He's a big boy now and he's just waaay to busy playing to go pick apples with us. I'm so thankful he lives in a neighborhood where he's surrounded with so many friends that he doesn't have time for us anymore, but that doesn't mean I don't miss him and doing these things with him.

Oh well. My sister and I still kept the tradition going. This year I got a ton! Well more like 16 pounds...same thing. And we hit up their little shop and grabbed us some apple cider and apple doughnuts. Now that I had all these apples, only question was what was I going to make with them?!

One recipe I knew I had to try was one my sister at Thrifty Decor Chick posted a while back. It's so easy! With just 3 ingredients I made the best Crockpot Cinnamon Applesauce!
And you can too! All you need is a bunch of apples, some sugar and a few dashes of cinnamon to make this amazing sweet treat! That's it...oh and a crockpot :)
The hardest part is waiting the four long agonizing hours for it to cook. No stirring, no chopping, no slicing, no dicing (If you have an apple peeler/corer/slicer, if not it might take some more work. See below for a link to buy one). So easy.
I've already got one jar in the freezer and one I'm burning through in the fridge. Every morning I take a huge spoonful and toss it in some vanilla yogurt. It's the best way to start my day!
Ingredients:
10-12 Apples peeled, cored and sliced
1/2 Cup white sugar
2 Tbsp cinnamon
*dash of nutmeg (you don't need it but I added it for fun)
*1 Tbsp vanilla (again you don't need it, but why not?!)

Directions:
Throw your readied apples in the crockpot.

Sprinkle the sugar and cinnamon over the top (and the other ingredients if you're adding them).

Set the pot to high and cook for four hours.

Remove the lid, stir and dive in!

That's it! It's so easy and still so delicious! Awesome!

    Your nephew sounds sweet, even if he is too busy to go apple picking with you anymore. I love my nieces and nephew and I have to remember that the boy that holds my hand now probably won't in the future. After all, girls become icky.
