Hey Y'all! It's finally Fall!! I am so excited! As I've been saying for the past few weeks this is seriously my favorite time of the year. Windows wide open, sweaters on real tight, apples and pumpkins all over the place. It's amazing. Oh and candy! Candy everywhere!
I can't help but start buying it up as soon as those huge bags hit the shelf. We are Sam's Club members and they have these ginormous bags full of awesomeness that I just can't resist. Seriously. It's like I walk by them and they magically jump into my cart...that's what I tell my Hub anyway. :)
So when I saw a huge bag of Fall M&Ms sitting there I knew I had to grab them up. But what to do with them? Eat them all? Sure, but I'd feel really bad about it...eventually. Another option, bake with them and share whatever I make with others? That sounds much better.
So that's what I did. I opened up the cabinet and started to pull out everything I would need for cookies, but realized I was almost out of flour. Seeing as that is basically the main ingredient in cookies, I was stuck.
But then I noticed a huge bag of bread flour I had bought a while ago to use in my bread maker (That I've only used once. Which everyone told me would happen. But I didn't listen. Live and learn.) and decided to give that a try! What I ended up with were crazy chewy and delicious Brown Butter M&M Cookies!
Needless to say I am sooo glad I ran out of flour, because these things are insanely delicious! The chewiness from the bread flour combined with the nuttiness from the brown butter (tutorial for brown butter found here) combined with the m&ms puts these over the top!
I've made them four different times now and just had to share them with you. I still can't decide if I like them a little under cooked and super chewy or cooked just right with a little crunch dunked in milk. Both ways are excellent!
I always throw in a couple chocolate chips, too because there's no such thing as too much chocolate in this house. Maybe that's why I love this time of year so much. Halloween candy is endless!
I honestly cannot stop making these. I'm tempted to go make another batch right now! Hope you can't resist and go make some yourselves, too. You won't regret it!
Ingredients:
2 sticks butter, browned
2 1/2 Cups bread flour
1 tsp salt
1 tsp baking soda
1 egg
1 egg yolk
2 Tbsp milk (whatever kind you have)
1 Tbsp vanilla
1 Cup brown sugar
1/4 Cup white sugar
1 Cup chocolate M&Ms
1/2 Cup chocolate chips
Directions:
Prepare your brown butter. Allow to cool in the fridge while you mix up your other ingredients.
In a medium bowl combine the flour, salt and baking soda. Set aside.
In a measuring cup whisk together the egg, egg yolk, milk and vanilla.
After the butter is cooled combine in your mixer with the sugars using a paddle attachment on medium speed for two minutes.
Reduce the mixer speed to stir and pour in the egg mixture.
While keeping the same speed, slowly add in the dry ingredients. Scrape down the sides with a spatula a time or two to make sure it's completely mixed together.
Remove the bowl and stir in the candies and chocolate chips using the spatula. Refrigerate dough for about an hour.
Preheat oven to 375 degrees. Line a baking sheet with a silpat or parchment paper. Move the racks to the top and bottom thirds of your oven.
Scoop out the dough using a cookie scoop and bake for 12-15 minutes, moving the cookies from the top to bottom rack halfway through. If you like chewy cookies do 12 minutes, if you like crunchy do 15.
Place on a cooling rack and let set a few minutes before eating all of them in one sitting (like I do)!
