Copycat Cheddar Bay Biscuits

Hey Y'All and Happy Thursday to ya! I've got the windows open, glass of wine in my hand, and Harry Potter is about to start. Which Harry? Who cares! I love them all. Plus...dinner tonight is all leftovers, so this lady doesn't have to cook! Woot! This is like my perfect Thursday evening. 

Don't get me wrong, you know I love to cook. And that's why I'm excited about tonight. I've been whipping up some yummy dishes this week. First it was my Crab Salad with homemade biscuits, next was our old faithful tacos, and then I made this amazing Chicken Bacon Skillet with Homemade Alfredo...recipe coming soon :) 

So tonight we get to eat up some of those yummy meals. And with that I have some of my leftover Copycat Cheddar Bay Biscuits!
Pretty much the only reason I even go to Red Lobster is for these delicious, warm, buttery pieces of bread heaven. As I mentioned recently, I'm not a huge fan of seafood

But I'll drive the 40 minutes to get these yummy babies.

Well I used to drive that far. Now that I can make these at home, I doubt I'll be visiting the Lobster anytime soon. 

These were so quick and easy. No rise time. No yeast. Just a few measurements and stirs and scoops and you're done!
These are ah.ma.zing! Amazing. I seriously can't say it enough. They are just like Red Lobster's, but I added more cheese. Of course I did. Because I love cheese! Which totally made them better. In my opinion.
And the melted butter topping is perfection. It gets into all the nooks and crannies and it's just...it's just...umm...sorry I was taking a bite of one of these. What were we talking about? Oh yeah, these awesome biscuits. I am obsessed. 
You gotta try these!

Ingredients:
2 Cups flour
1 Tbsp sugar
1 Tbsp baking powder
2 tsp garlic powder
1/2 tsp salt
1 Cup buttermilk
1/2 Cup butter, melted
2 Cups shredded sharp cheddar cheese (1 1/2 Cups if you aren't a cheese nut like me)

Butter topping
1/4 Cup butter, melted
1/2 Tbsp parsley
1/2 tsp garlic powder

Directions:

Preheat the oven to 450 degrees. Line a baking sheet with a silpat. Set aside.

Combine in a large bowl the flour, sugar, baking powder, garlic powder and salt.

In a medium bowl whisk together the buttermilk and melted butter. 

Pour the wet mix into the dry ingredients and stir it together using a spatula. Fold in the shredded cheese.

Grab a 1/4 cup measuring cup and scoop out the dough onto the baking sheet. Cook for about 16-20 minutes.

While they're baking, mix up all the toppings ingredients. Brush the tops with as much butter as you want!

Are you as obsessed with these biscuits as I am!? I could probably eat them everyday. Lucky for me this recipe is super easy so that is totally doable!
